4-5 (24-28) boneless chicken breasts
1/4 (1 1/2) cups sesame oil
1/4 (1 1/2) cups creamy peanut butter
1/4 (1 1/2) cups soy sauce
3 Tbs ( 1cup + 2 tbs) sugar
1 tsp (2 Tbs) minced garlic
1 tsp (2 Tbs) crushed red pepper
cooking day: slice chicken into bite-size pieces and saute in sesame oil until chicken is no longer pink. Add peanut butter; soy sauce, sugar, garlic, and red pepper. Simmer until sauce is thickened and heated through, about 15 minutes. Cool completely. Freeze in freezer bags.
Serving day: Thaw completely. Heat chicken and sauce on stove. Serve over rice and top with crushed peanuts if desired.
